Ingredients:
- 2 cups pumpkin
- Ener-G Egg Replacer for 4 eggs
- 2 tsp cinnamon
- 2 tsp vanilla
- 1 cup vegetable oil
- 2 cups flour
- 1 tsp baking soda
- 2 tsp baking powder
- 1 2/3 cup sugar
Preparation:
Pre-heat the oven to 350 degrees and lightly grease a cake pan.Whisk together the egg replacer and pumpkin, then add in the cinnamon, vanilla and vegetable oil.
Add the remaining ingredients and stir until just combined.
Bake for 2- to 25 minutes, or until a toothpick or knife inserted in the center comes out clean.
Allow to cool and top with vegan cream cheese frosting.
