Fennel and mint salad with orange balsamic vinaigrette

Cook Time: 10 minutes

Ingredients:

  • 2 bulbs fennel (anise), slivered
  • 1/2 head lettuce, or approx 2 cups
  • 1/4 cup chopped fresh mint leaves
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper

Preparation:

Toss fennel with oil, salt and pepper on roasting pan and bake in oven at 350 degrees for 8-10 minutes, until fennel is slightly soft. Allow to cool slightly, and toss with lettuce and mint leaves. Serve with orange balsamic vinaigrette.
