Vegetarian Turnip Gratine

Ingredients:

  • 2 cups mashed turnips
  • 1 egg
  • 2 tbsp butter or margarine
  • pinch ground savory, to taste
  • 3 tbsp butter or margarine
  • 1 tbsp potato mix
  • 2 tbsp lemon juice
  • 1 cup milk
  • 1 cup chopped cheddar cheese

Preparation:

Mix mashed turnip, egg, 2 tablespoons of butter and the savory. Place this mixture in large baking dish.

Preheat oven to 400 degrees F.

Make a white sauce with the remaining 3 tablespoons of butter, potato mix, lemon juice and milk. Do this by stirring these ingredients rapidly over medium-low heat until sauce thickens.

Pour sauce over turnip mixture and sprinkle grated cheddar cheese over top.

Bake for 25 minutes. Serve warm mixed with sour cream.
