Ingredients:
- 2 bunches broccoli, chopped
- 1 head cauliflower, chopped
- 3 carrots, sliced thin
- 1 tbsp vegetable oil
- 1/2 tsp salt
- 1 tsp ginger
- 1 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp nutmeg
- dash red pepper flakes (or more, to taste)
- 1 cup sour cream
- 2 tbsp cider vinegar
- 1 tbsp honey or agave nectar
- 4-5 green onions, sliced
- 1/3 cup pine nuts or other nut (optional)
Preparation:
Steam the broccoli, cauliflower and carrots until just barely tender.In a large skillet, heat the salt, spices and red pepper flakes in oil until lightly browned.
In a large bowl, whisk together the sour cream vinegar, honey or agave sweetener and the cooked spices. Add the vegetables and toss gently until well combined. Sprinkle the green onions and pine nuts on top.
