Vegan Bean Bruschetta

Ingredients:

  • 1 16 ounce can Great Northern Beans, rinsed and drained
  • 1 large ripe tomato, diced
  • 2 tablespoons chopped fresh basil or 2 teaspoons dried basil
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper or red pepper flakes
  • 24 slices (1/2-inch thick) French or Italian bread, grilled or lightly toasted

Preparation:

In medium bowl, combine all ingredients except bread; mix well. Spoon mixture on bread and serve.
