Ingredients:
- 2 1/2 cups couscous, cooked
- 2 tbsp olive oil
- 1 cup vegetable broth
- 1 onion, chopped
- 2 carrots, sliced thin
- 1 turnip, sliced thin
- 1 zucchni, sliced thin
- 1 sweet potato, chopped
- 1 can chickpeas (garbanzo beans)
- 1 tbsp tomato paste
- 1/2 tsp cinnamon
- 1/2 tsp turmeric
- pinch cumin
- handful of raisins
- handful of pine nuts or almonds
Preparation:
Sautee onion, carrots, sweet potato, zucchini, and turnips in olive oil for 8 to 10 minutes. Reduce heat to medium and add vegetable broth.Allow to simmer, then add spices, tomato paste, and garbanzo beans.
Stir in prepared couscous, raisins and nuts.
