Sugar-free Gluten-Free Muffins

These sugar-free, gluten-free and wheat-free muffins have a bit of Splenda for sweetener instead of sugar and are made from brown rice flour to make them gluten-free. Recipe courtesy of Ener-G Foods. Ingredients:

  • 2 cups brown rice flour
  • 2 tsp baking powder
  • 4 tbsp Splenda
  • 1 egg
  • 1 tbsp oil
  • 1 cup milk

Preparation:

Preheat oven to 350 degrees. Beat egg. Add milk and oil. Mix together well. Add remaining ingredients and mix about 1 mix for one minute.

Fill lightly oiled muffin tins 3/4 full.

Place in oven for 25 to 28 minutes.
