Ingredients:
- 4 cups wheat bran
- 2 1/2 cups soy milk
- 1/2 cup silken (soft) tofu
- 2/3 cup brown sugar
- 1/2 cup maple syrup
- 1/3 cup margarine, melted
- 2 cups flour
- 3 tbsp baking powder
- 1 tsp baking soda
- 1 cup raisins
- 1 cup walnuts, chopped (optional)
Preparation:
Pre-heat oven to 375 degrees and lightly grease or line a muffin pan.In a large bowl, mix together the wheat bran and soy milk and let stand for at least five minutes.
In a blender or food processor, process the tofu, sugar, maple syrup and margarine until smooth and creamy.
In a separate large bowl, mix together the flour, baking powder and baking soda.
Add the tofu to the wheat bran, stirring to incorporate, then add in the flour, mixing just until combined. Gently fold in the raisins and walnuts.
Drop batter by large spoonfuls into muffin pan. Bake for 30 minutes.
