Ingredients:
- 1 cup cornmeal
- 1 cup flour
- 1 tsp salt
- 2 1/2 tsp baking powder
- 1 cup soy milk
- Egg replacer for 2 eggs
- 2 tbsp vegan margarine
Preparation:
Pre-heat oven to 400 degrees and lightly oil a muffin pan.Sift the dry ingredients into a mixing bowl.
In a small bowl, combine the soy milk and egg replacer and add to the dry ingredients. Add the vegan margarine and stir until blended.
Pour the batter into the muffin pan, filling each muffin cup about 2/3 full.
Bake for 20 minutes, or until an inserted toothpick or fork comes out clean.
